Rfissa (Chicken with Fenugreek and Msemen)

Rfissa is a postpartum recovery dish in Moroccan culture, traditionally given to mothers after birth for its warming properties.

Ingredients

  • 1 whole chicken
  • 2 onions
  • ½ cup lentils
  • 2 tsp fenugreek seeds
  • 1 tsp ras el hanout
  • saffron
  • 1 tsp ginger
  • ½ tsp turmeric
  • fresh cilantro
  • 200ml olive oil. Base: torn msemen flatbreads (or use lavash)

Method

  1. Simmering — Simmer chicken with onions, spices, lentils in water 45 min–1 hour.
  2. Removing — Remove chicken. Shred meat.
  3. Reducing — Reduce broth to thick sauce.
  4. Soaking — Soak torn flatbreads in broth until softened.
  5. Layering — Layer: flatbread base → chicken → more sauce. Top with extra cilantro.
