Simit (Turkish Sesame Bread Ring)

Simit has been sold by street vendors in Istanbul since the 15th century — a working-class breakfast staple.

Ingredients

  • 500g bread flour
  • 7g yeast
  • 1 tsp salt
  • 300ml warm water
  • 2 tbsp grape molasses (pekmez) mixed with 3 tbsp water for dipping
  • 200g sesame seeds

Method

  1. Making — Make dough, knead, rest 1 hour.
  2. Dividing — Divide into portions. Roll into long ropes, form rings.
  3. Dipping — Dip in pekmez/water mixture, then roll in sesame seeds to coat.
  4. Resting — Rest 30 min. Bake 200°C (400°F)/200°C (400°F) 20–25 min until deep golden.
