Tabbouleh

Authentic Lebanese tabbouleh is predominantly parsley; the "bulgur-forward" Western version is a misinterpretation.

Ingredients

  • 50g fine bulgur
  • 4 large bunches flat-leaf parsley
  • 1 bunch mint
  • 4 ripe tomatoes diced
  • 1 red onion finely diced
  • juice of 2–3 lemons
  • 60ml olive oil
  • salt
  • black pepper

Method

  1. Soaking — Soak bulgur in lemon juice 30 min until softened (no cooking needed for fine bulgur).
  2. Step 2 — Finely chop parsley and mint (this is the majority of the salad).
  3. Combining — Combine all ingredients, toss well. Dress generously with more lemon.
  4. Resting — Rest 20 min. Serve with romaine lettuce leaves as scoops.
