🍳 Equipment: Frying pan
The famous leftovers dish — its name imitates the sound of cabbage and potato frying in the pan. Mrs. Beeton's version uses thin slices of cold roast beef fried with mashed potato and greens, finished with a splash of vinegar.

Ingredients

  • Thin slices of cold roast or boiled beef
  • Cold mashed potatoes
  • Cold greens of any kind
  • 1 onion, shredded
  • Butter or dripping
  • Salt and pepper
  • Vinegar (if liked)

Method

  1. Fry meat — Melt a little butter or dripping in a frying pan. Put in the slices of cold beef and fry quickly until lightly browned on both sides. Remove and keep hot.
  2. Fry onion — Put the shredded onion into the same pan and fry until brown.
  3. Add vegetables — Add the cold mashed potatoes and greens to the pan. Season to taste with salt and pepper.
  4. Stir — Stir until thoroughly hot, breaking up any lumps. Add a little vinegar if liked.
  5. Plate — Turn the vegetable mixture onto a hot dish, place the fried beef slices on top, and serve at once.
