Tomato Bruschetta with Basil

Bruschetta (from the Italian "bruscare," meaning to char over coals) dates to ancient Rome; the practice of rubbing garlic on toasted bread drizzled with olive oil is one of the oldest recorded "recipes" in European history.

Ingredients

  • 1 baguette or ciabatta loaf, sliced 2cm/¾ in thick on the diagonal
  • 500g (1 lb) ripe mixed tomatoes, diced small
  • 3 tbsp extra-virgin olive oil, plus extra for bread
  • 2 cloves garlic (1 minced, 1 halved for rubbing)
  • Large handful fresh basil leaves, torn
  • 1 tsp balsamic vinegar
  • ½ tsp flaked sea salt
  • Black pepper

Method

  1. Tossing — Toss diced tomatoes with minced garlic, olive oil, balsamic, salt, and pepper. Let stand at room temperature 15–20 minutes.
  2. Grilling — Grill or toast bread slices until golden on both sides.
  3. Step 3 — Immediately rub one side of each hot toast with the cut side of the halved garlic.
  4. Drizzling — Drizzle rubbed sides with olive oil. Spoon tomato mixture generously on top.
  5. Step 5 — Scatter torn basil. Finish with extra flaked salt and a grind of pepper. Serve immediately.
