Aloo Posto (Potatoes in Poppy Seed Paste)
Posto (poppy seeds) is so central to Bengali cuisine that Bengalis are nicknamed "posto khaako" (poppy seed eaters).
Ingredients
- 4 medium potatoes, peeled and cubed
- 4 tbsp white poppy seeds (posto), soaked 30 min
- 3 tbsp mustard oil
- 1 tsp nigella seeds
- 2–3 green chilies, slit
- ½ tsp turmeric
- Salt to taste
Method
- Blending — Blend soaked poppy seeds with a little water to a smooth paste.
- Heating — Heat mustard oil to smoking; reduce. Add nigella seeds and chilies.
- Adding — Add potatoes, turmeric, and salt. Fry 5 min.
- Adding — Add poppy paste and 3 tbsp water. Cover, cook on low until potatoes are tender, 15 min.
- Step 5 — Uncover, cook until dry. Serve with white rice.
