Appam (Lacy Rice Pancakes)

Appam is thought to have been introduced to Kerala by early Syrian Christian settlers.

Ingredients

  • 300 g raw white rice, soaked 4 hours
  • 100 g cooked rice
  • 150 ml thin coconut milk
  • 1 tsp active dry yeast
  • 1 tsp sugar
  • ½ tsp salt

Method

  1. Dissolving — Dissolve yeast in 3 tbsp warm water with sugar. Rest 10 min until frothy.
  2. Blending — Blend raw and cooked rice together with coconut milk to smooth batter.
  3. Mixing — Mix in yeast. Batter should be like thin crêpe batter.
  4. Step 4 — Ferment overnight in warm place (8–12 hours). Batter will bubble and rise.
  5. Adding — Add salt. Heat an appam pan or small wok. Ladle batter, swirl quickly so edges coat the pan thinly while centre is thicker.
  6. Covering — Cover, cook 2–3 min until centre is set and edges are lacy and crisp.
