Cao Lau

Ingredients

  • 200g cao lau noodles (thick, chewy, made with local well water and lye)
  • 200g char siu pork (sliced)
  • 100g pork skin cracklings
  • 50g dried won ton chips
  • bean sprouts
  • mint
  • cilantro
  • green onion. **Sauce:** 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • dash sesame oil
  • star anise–infused broth

Method

  1. Step 1 — Blanch noodles; drain.
  2. Warming — Warm pork slices in seasoned broth.
  3. Step 3 — Bowl: noodles, pork, cracklings, won ton chips, sprouts, herbs.
  4. Drizzling — Drizzle with sauce; very little broth — this is a dry-style dish.
