Chili Crab

Ingredients

  • 2 whole crabs (1kg each, cleaned and cracked)
  • 400ml tomato sauce
  • 3 tbsp sweet chili sauce
  • 2 eggs (lightly beaten)
  • 3 tbsp sambal belacan
  • 5 cloves garlic (minced)
  • 3cm ginger (minced)
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp cornstarch + 3 tbsp water
  • 2 tbsp oil
  • cilantro. **Serve with:** mantou buns (fried)

Method

  1. Heating — Heat oil in large wok; fry garlic and ginger 1 min.
  2. Adding — Add sambal; cook 2 min.
  3. Adding — Add crabs; stir-fry 3 min.
  4. Adding — Add tomato sauce, sweet chili, soy sauce, sugar, 200ml water.
  5. Covering — Cover; cook 8–10 min until crabs cooked.
  6. Stirring — Stir in cornstarch slurry; drizzle in beaten eggs while stirring gently.
  7. Garnishing — Garnish with cilantro; serve with mantou to mop up sauce.
