Sisig

Ingredients

  • 500g pork face/cheek (boiled until tender)
  • 200g pork belly (grilled)
  • 3 green chilies (minced)
  • 2 tbsp calamansi juice
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 onion (minced)
  • 1 egg (optional, cracked on top)
  • mayonnaise (optional)
  • pork cracklings

Method

  1. Boiling — Boil pork face until tender; grill or pan-fry until slightly crispy.
  2. Chopping — Chop finely.
  3. Mixing — Mix with onion, chilies, calamansi, soy, oyster sauce.
  4. Sizzling — Sizzle on cast iron plate; crack egg in center if desired.
  5. Topping — Top with cracklings; serve with rice.
