Char Kway Teow (Malaysian-Cantonese) 炒粿条

Ingredients

  • 400g flat rice noodles
  • 150g shrimp
  • 100g Chinese sausage (sliced)
  • 100g bean sprouts
  • 2 eggs
  • 3 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chili paste (sambal)
  • 3 tbsp lard or oil

Method

  1. High-heatting — High-heat wok until smoking. Fry garlic in lard 30 sec.
  2. Adding — Add sausage, shrimp; fry 1 min.
  3. Adding — Add noodles; press flat to char 1 min. Add sauces and sambal; toss.
  4. Step 4 — Push to side; scramble eggs. Mix through with bean sprouts.
  5. Serving — Serve immediately.
