Popiah (Fresh Spring Rolls) 薄饼

Ingredients

  • (Wrappers) 12 thin popiah skins (or large rice paper, softened)
  • (Filling) 500g jicama or turnip (julienned, stir-fried with garlic and soy sauce until soft)
  • 200g bean sprouts (blanched)
  • 2 eggs (scrambled)
  • 100g shrimp (cooked, shelled)
  • 100g tofu (fried, sliced)
  • lettuce leaves
  • (Sauces) hoisin sauce
  • chili sauce
  • toasted sesame seeds
  • crushed peanuts
  • crispy shallots

Method

  1. Cooking — Cook jicama in oil with garlic until very tender, 20 min. Season with soy sauce; cool.
  2. Assembling — Assemble: Lay skin flat; spread hoisin and chili sauce. Add lettuce, then filling ingredients.
  3. Sprinkling — Sprinkle peanuts, sesame, shallots. Roll tightly.
  4. Serving — Serve immediately.
