Gỏi Cuốn (Fresh Spring Rolls)

The fresh (unfried) spring roll is a Southern Vietnamese tradition — Northern Vietnamese prefer the fried chả giò version.

Ingredients

  • Rice paper rounds
  • 200g shrimp cooked and halved
  • 100g rice vermicelli cooked
  • butter lettuce leaves
  • mint
  • Thai basil
  • cilantro
  • cucumber julienned
  • bean sprouts. Dipping sauce: hoisin + peanut butter + lime + sriracha + water

Method

  1. Soaking — Soak rice paper briefly in warm water until just pliable.
  2. Placing — Place on damp cloth. Layer: lettuce → vermicelli → herbs → shrimp facing outward.
  3. Rolling — Roll tightly, tucking sides in as you go.
  4. Serving — Serve immediately with peanut-hoisin dipping sauce.
