Gỏi Cuốn (Fresh Spring Rolls)
The fresh (unfried) spring roll is a Southern Vietnamese tradition — Northern Vietnamese prefer the fried chả giò version.
Ingredients
- Rice paper rounds
- 200g shrimp cooked and halved
- 100g rice vermicelli cooked
- butter lettuce leaves
- mint
- Thai basil
- cilantro
- cucumber julienned
- bean sprouts. Dipping sauce: hoisin + peanut butter + lime + sriracha + water
Method
- Soaking — Soak rice paper briefly in warm water until just pliable.
- Placing — Place on damp cloth. Layer: lettuce → vermicelli → herbs → shrimp facing outward.
- Rolling — Roll tightly, tucking sides in as you go.
- Serving — Serve immediately with peanut-hoisin dipping sauce.
