Har Gow (Shrimp Dumplings — Dim Sum)

A master dim sum chef is judged by the number of pleats in a har gow — 7 minimum, 9+ is mastery.

Ingredients

  • (Wrapper) 200g wheat starch + 50g tapioca starch + 200ml boiling water + 1 tbsp oil. Filling: 300g shrimp roughly chopped
  • 50g bamboo shoots minced
  • ½ tsp salt
  • 1 tsp sesame oil
  • 1 tsp oyster sauce
  • 1 tsp cornstarch
  • 1 egg white

Method

  1. Pouring — Pour boiling water into starches with oil; knead until smooth plastic dough.
  2. Rolling — Roll thin, cut 9cm rounds.
  3. Mixing — Mix filling. Place 1 tsp on wrapper. Make pleats along one side to form crescent.
  4. Steaming — Steam 6–8 min until translucent.
