Khao Soi (Northern Thai Curry Noodle Soup)

Khao soi reflects Burmese and Yunnan Chinese influences — the crispy-soft noodle dual texture is unique to Northern Thai cuisine.

Ingredients

  • 400g egg noodles (half to boil, half to deep-fry for crispy topping)
  • 400g chicken thighs. Curry: 3 tbsp red curry paste
  • 400ml coconut milk
  • 400ml chicken stock
  • 2 tbsp yellow curry powder
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar. Garnish: shallots
  • pickled mustard greens
  • lime
  • chili oil

Method

  1. Frying — Fry half the noodles until crispy for topping.
  2. Frying — Fry curry paste in thick coconut cream until fragrant.
  3. Adding — Add chicken, remaining coconut milk and stock.
  4. Simmering — Simmer 20–25 min. Season with fish sauce and palm sugar.
  5. Boiling — Boil remaining noodles. Place in bowl with chicken and broth. Top with crispy noodles and garnishes.
