Khao Soi (Northern Thai Curry Noodle Soup)
Khao soi reflects Burmese and Yunnan Chinese influences — the crispy-soft noodle dual texture is unique to Northern Thai cuisine.
Ingredients
- 400g egg noodles (half to boil, half to deep-fry for crispy topping)
- 400g chicken thighs. Curry: 3 tbsp red curry paste
- 400ml coconut milk
- 400ml chicken stock
- 2 tbsp yellow curry powder
- 2 tbsp fish sauce
- 1 tbsp palm sugar. Garnish: shallots
- pickled mustard greens
- lime
- chili oil
Method
- Frying — Fry half the noodles until crispy for topping.
- Frying — Fry curry paste in thick coconut cream until fragrant.
- Adding — Add chicken, remaining coconut milk and stock.
- Simmering — Simmer 20–25 min. Season with fish sauce and palm sugar.
- Boiling — Boil remaining noodles. Place in bowl with chicken and broth. Top with crispy noodles and garnishes.
