Onigiri (Rice Balls)
Onigiri records exist from the Heian period (794–1185 CE) — portable rice balls were samurai field rations.
Ingredients
- 600g short-grain sushi rice cooked and slightly warm
- salt
- nori sheets. Fillings: salted salmon
- pickled plum (umeboshi)
- seasoned tuna mayo
- or seasoned kelp (kombu tsukudani)
Method
- Wetting — Wet hands with water, coat with salt.
- Taking — Take 100–120g warm rice, press flat.
- Placing — Place filling in center, fold rice around to encase.
- Shaping — Shape into triangle or cylinder with firm pressure.
- Wrapping — Wrap with a strip of nori.
