Onigiri (Rice Balls)

Onigiri records exist from the Heian period (794–1185 CE) — portable rice balls were samurai field rations.

Ingredients

  • 600g short-grain sushi rice cooked and slightly warm
  • salt
  • nori sheets. Fillings: salted salmon
  • pickled plum (umeboshi)
  • seasoned tuna mayo
  • or seasoned kelp (kombu tsukudani)

Method

  1. Wetting — Wet hands with water, coat with salt.
  2. Taking — Take 100–120g warm rice, press flat.
  3. Placing — Place filling in center, fold rice around to encase.
  4. Shaping — Shape into triangle or cylinder with firm pressure.
  5. Wrapping — Wrap with a strip of nori.
