Samgyeopsal (Grilled Pork Belly)
Korean ssam (wrap culture) is one of the oldest forms of intuitive portion control and flavor layering in East Asian cuisine.
Ingredients
- 600g thick-sliced pork belly
- sesame oil
- salt
- black pepper. Accompaniments: fresh garlic slices
- green chili
- perilla leaves
- lettuce leaves
- gochujang
- ssamjang (gochujang + doenjang + sesame)
- rice. Banchan: kimchi
- pickled radish
- scallion salad
Method
- Grilling — Grill pork belly on tabletop grill (or pan) over high heat.
- Cutting — Cut into bite-sized pieces with scissors on the grill as it cooks.
- Dipping — Dip finished pieces in sesame oil-salt mixture.
- Wrapping — Wrap in lettuce or perilla leaf with garlic, chili, ssamjang, and rice.
- Eatting — Eat the wrap in one bite.
