Samgyeopsal (Grilled Pork Belly)

Korean ssam (wrap culture) is one of the oldest forms of intuitive portion control and flavor layering in East Asian cuisine.

Ingredients

  • 600g thick-sliced pork belly
  • sesame oil
  • salt
  • black pepper. Accompaniments: fresh garlic slices
  • green chili
  • perilla leaves
  • lettuce leaves
  • gochujang
  • ssamjang (gochujang + doenjang + sesame)
  • rice. Banchan: kimchi
  • pickled radish
  • scallion salad

Method

  1. Grilling — Grill pork belly on tabletop grill (or pan) over high heat.
  2. Cutting — Cut into bite-sized pieces with scissors on the grill as it cooks.
  3. Dipping — Dip finished pieces in sesame oil-salt mixture.
  4. Wrapping — Wrap in lettuce or perilla leaf with garlic, chili, ssamjang, and rice.
  5. Eatting — Eat the wrap in one bite.
