Wonton Soup

Cantonese wontons differ from Shanghainese — smaller, thinner-skinned, shrimp-forward.

Ingredients

  • (Wontons) 24 wonton wrappers
  • 200g shrimp
  • 150g ground pork
  • 1 tbsp soy
  • 1 tsp sesame oil
  • ginger
  • 1 egg white. Broth: 1.5L chicken stock
  • 2 tbsp soy
  • 1 tsp sesame oil
  • ginger slices
  • scallions
  • white pepper

Method

  1. Mincing — Mince shrimp, combine with pork, soy, sesame oil, ginger, egg white.
  2. Placing — Place 1 tsp filling on each wrapper. Fold into triangles, bring corners together.
  3. Step 3 — Bring broth with seasonings to gentle simmer.
  4. Boiling — Boil wontons separately until they float, drain.
  5. Placing — Place in bowls, ladle hot broth over. Top with scallions.
