Blini

Blini were a pagan Slavic symbol of the sun, traditionally made during Maslenitsa (Butter Week) to celebrate the end of winter.

Ingredients

  • 200 g buckwheat flour
  • 200 g all-purpose flour
  • 7 g instant yeast
  • 500 ml warm milk
  • 2 eggs, separated
  • 1 tsp sugar
  • 1 tsp salt
  • 50 g butter, melted
  • Additional butter for frying

Method

  1. Warming — Warm half the milk; whisk in yeast and sugar. Stand 10 minutes until frothy.
  2. Combining — Combine flours and salt; whisk in yeast mixture and remaining milk.
  3. Beating — Beat in egg yolks and melted butter.
  4. Covering — Cover; prove in warm place 1 hour until bubbly.
  5. Beating — Beat egg whites to stiff peaks; fold gently into batter.
  6. Heating — Heat blini pan or small skillet over medium heat; brush with butter.
  7. Pouring — Pour small ladle of batter; cook until bubbles form on surface, about 2 minutes.
  8. Flipping — Flip; cook 1 minute more.
  9. Serving — Serve with smetana (sour cream), smoked salmon, caviar, or mushroom filling.
