Blini
Blini were a pagan Slavic symbol of the sun, traditionally made during Maslenitsa (Butter Week) to celebrate the end of winter.
Ingredients
- 200 g buckwheat flour
- 200 g all-purpose flour
- 7 g instant yeast
- 500 ml warm milk
- 2 eggs, separated
- 1 tsp sugar
- 1 tsp salt
- 50 g butter, melted
- Additional butter for frying
Method
- Warming — Warm half the milk; whisk in yeast and sugar. Stand 10 minutes until frothy.
- Combining — Combine flours and salt; whisk in yeast mixture and remaining milk.
- Beating — Beat in egg yolks and melted butter.
- Covering — Cover; prove in warm place 1 hour until bubbly.
- Beating — Beat egg whites to stiff peaks; fold gently into batter.
- Heating — Heat blini pan or small skillet over medium heat; brush with butter.
- Pouring — Pour small ladle of batter; cook until bubbles form on surface, about 2 minutes.
- Flipping — Flip; cook 1 minute more.
- Serving — Serve with smetana (sour cream), smoked salmon, caviar, or mushroom filling.
