Paprikash (Chicken Paprikash)
Paprikash is considered one of Hungary's most emblematic dishes; the sour cream sauce is what distinguishes paprikash from gulyás.
Ingredients
- 1 whole chicken, cut into pieces (about 1.2 kg)
- 3 large onions, finely diced
- 3 tbsp sweet Hungarian paprika
- 1 tsp hot paprika
- 200 ml chicken stock
- 200 g sour cream
- 1 tbsp flour
- 2 tbsp lard or oil
- Salt and pepper
- Fresh dill or parsley to serve
Method
- Seasoning — Season chicken pieces; brown in lard in large pot. Remove and set aside.
- Sautéing — Sauté onions in same pot over medium heat until very soft and golden, about 20 minutes.
- Removing — Remove from heat; stir in both paprikas immediately.
- Step 4 — Return chicken to pot; add stock.
- Covering — Cover and simmer gently 40 minutes until chicken is cooked through.
- Removing — Remove chicken; keep warm.
- Whisking — Whisk sour cream with flour; stir into cooking juices. Simmer gently 5 minutes, do not boil.
- Step 8 — Return chicken to sauce; serve over spaetzle or egg noodles with fresh dill.
