Paprikash (Chicken Paprikash)

Paprikash is considered one of Hungary's most emblematic dishes; the sour cream sauce is what distinguishes paprikash from gulyás.

Ingredients

  • 1 whole chicken, cut into pieces (about 1.2 kg)
  • 3 large onions, finely diced
  • 3 tbsp sweet Hungarian paprika
  • 1 tsp hot paprika
  • 200 ml chicken stock
  • 200 g sour cream
  • 1 tbsp flour
  • 2 tbsp lard or oil
  • Salt and pepper
  • Fresh dill or parsley to serve

Method

  1. Seasoning — Season chicken pieces; brown in lard in large pot. Remove and set aside.
  2. Sautéing — Sauté onions in same pot over medium heat until very soft and golden, about 20 minutes.
  3. Removing — Remove from heat; stir in both paprikas immediately.
  4. Step 4 — Return chicken to pot; add stock.
  5. Covering — Cover and simmer gently 40 minutes until chicken is cooked through.
  6. Removing — Remove chicken; keep warm.
  7. Whisking — Whisk sour cream with flour; stir into cooking juices. Simmer gently 5 minutes, do not boil.
  8. Step 8 — Return chicken to sauce; serve over spaetzle or egg noodles with fresh dill.
