  • reduction of white wine + tarragon vinegar + shallots
  • fresh tarragon
  • chervil

Method

  1. Making — Make tarragon-shallot reduction.
  2. Step 2 — Proceed as hollandaise using this reduction.
  3. Stirring — Stir in fresh tarragon + chervil.
