Bollito Misto

A Piedmontese ritual of mixed boiled meats served from a steaming cart with three or four sauces. Each cut goes into the pot at a different time so everything finishes together. The broth is the secret product — rich, clear, and served first as a course of its own.

Ingredients

  • Beef shin, cotechino sausage, capon, veal tongue, calf's head
  • Classic broth: onion, carrot, celery, bay, peppercorns
  • Served with: salsa verde, mostarda, giardiniera

Method

  1. Cooking — Cook each meat separately in rich broth.
  2. Step 2 — Keep warm; slice at table.
  3. Serving — Serve with accompaniments.
