Brodetto di Pesce Marchigiano
A fish stew from the Marche coast, distinguished by vinegar in the broth and the use of thirteen types of fish. The vinegar sharpens the seafood flavours and keeps the flesh firm. Add the fish in order of density — firm-fleshed first, delicate last.
