Pesto Trapanese

Sicily's pesto, made with almonds, raw tomatoes, and basil instead of Liguria's pine nuts and cheese. The almonds are blanched and pounded, not toasted — toasting changes the character entirely. The tomatoes go in raw, just skinned and roughly crushed.

Ingredients

  • 60g almonds, blanched
  • 300g ripe tomatoes, peeled
  • 30g fresh basil
  • 1 garlic clove
  • 100ml olive oil
  • Salt

Method

  1. Step 1 — Blanch almonds briefly; peel.
  2. Blending — Blend all ingredients to rough paste.
  3. Tossing — Toss with pasta (casarecce or spaghetti).
