Pesto Trapanese
Sicily's pesto, made with almonds, raw tomatoes, and basil instead of Liguria's pine nuts and cheese. The almonds are blanched and pounded, not toasted — toasting changes the character entirely. The tomatoes go in raw, just skinned and roughly crushed.
Ingredients
- 60g almonds, blanched
- 300g ripe tomatoes, peeled
- 30g fresh basil
- 1 garlic clove
- 100ml olive oil
- Salt
Method
- Step 1 — Blanch almonds briefly; peel.
- Blending — Blend all ingredients to rough paste.
- Tossing — Toss with pasta (casarecce or spaghetti).
