Couscous with Seven Vegetables (Couscous Bidaoui)

Seven-vegetable couscous is a Friday tradition in Moroccan homes — the seventh vegetable varies by family and region.

Ingredients

  • 500g couscous
  • 500g lamb or chicken
  • 2 zucchini
  • 2 carrots
  • 2 turnips
  • 1 eggplant
  • 400g pumpkin/squash
  • 2 tomatoes
  • 400g chickpeas cooked
  • 1 onion
  • 1 tsp ras el hanout
  • ½ tsp ginger
  • ½ tsp turmeric
  • saffron
  • olive oil
  • butter
  • salt

Method

  1. Browning — Brown meat with spices and onion. Cover with water, simmer 30 min.
  2. Adding — Add harder vegetables (carrots, turnips, pumpkin). Simmer 20 min.
  3. Adding — Add zucchini, eggplant, tomatoes, chickpeas. Simmer 20 min.
  4. Steaming — Steam couscous separately, fluff with butter and salt.
  5. Step 5 — Mound couscous, arrange vegetables and meat on top. Pour some broth over.
