Couscous with Seven Vegetables (Couscous Bidaoui)
Seven-vegetable couscous is a Friday tradition in Moroccan homes — the seventh vegetable varies by family and region.
Ingredients
- 500g couscous
- 500g lamb or chicken
- 2 zucchini
- 2 carrots
- 2 turnips
- 1 eggplant
- 400g pumpkin/squash
- 2 tomatoes
- 400g chickpeas cooked
- 1 onion
- 1 tsp ras el hanout
- ½ tsp ginger
- ½ tsp turmeric
- saffron
- olive oil
- butter
- salt
Method
- Browning — Brown meat with spices and onion. Cover with water, simmer 30 min.
- Adding — Add harder vegetables (carrots, turnips, pumpkin). Simmer 20 min.
- Adding — Add zucchini, eggplant, tomatoes, chickpeas. Simmer 20 min.
- Steaming — Steam couscous separately, fluff with butter and salt.
- Step 5 — Mound couscous, arrange vegetables and meat on top. Pour some broth over.
