Harira (Moroccan Ramadan Soup)

Harira is traditionally eaten at sunset to break the Ramadan fast across Morocco.

Ingredients

  • 150g dried chickpeas (soaked)
  • 150g dried lentils
  • 300g lamb or beef diced
  • 2 onions
  • 400g crushed tomatoes
  • 100g thin vermicelli
  • bunch cilantro and parsley
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 1 tsp ginger
  • ½ tsp pepper
  • 2 tbsp butter
  • juice of 1 lemon
  • 2 tbsp flour slurry to thicken

Method

  1. Simmering — Simmer meat with onions, spices, tomatoes in 2L water.
  2. Adding — Add chickpeas and lentils after 30 min. Simmer 45 min more.
  3. Adding — Add vermicelli and herbs in final 10 min.
  4. Step 4 — Thicken with flour slurry. Add lemon juice, butter.
  5. Serving — Serve with dates and Moroccan sweetbreads for Iftar.
