Harira (Moroccan Ramadan Soup)
Harira is traditionally eaten at sunset to break the Ramadan fast across Morocco.
Ingredients
- 150g dried chickpeas (soaked)
- 150g dried lentils
- 300g lamb or beef diced
- 2 onions
- 400g crushed tomatoes
- 100g thin vermicelli
- bunch cilantro and parsley
- 1 tsp cinnamon
- 1 tsp turmeric
- 1 tsp ginger
- ½ tsp pepper
- 2 tbsp butter
- juice of 1 lemon
- 2 tbsp flour slurry to thicken
Method
- Simmering — Simmer meat with onions, spices, tomatoes in 2L water.
- Adding — Add chickpeas and lentils after 30 min. Simmer 45 min more.
- Adding — Add vermicelli and herbs in final 10 min.
- Step 4 — Thicken with flour slurry. Add lemon juice, butter.
- Serving — Serve with dates and Moroccan sweetbreads for Iftar.
