Taramasalata

Taramasalata is eaten extensively during Lent — fish roe permitted when meat was forbidden in Orthodox tradition.

Ingredients

  • 150g tarama (cured carp or cod roe)
  • 200g stale white bread (crusts removed, soaked)
  • juice of 2 lemons
  • 1 small onion
  • 200ml olive oil
  • 1 clove garlic

Method

  1. Squeezing — Squeeze water from bread thoroughly.
  2. Blending — Blend tarama, bread, onion, garlic, lemon juice until smooth.
  3. Step 3 — Slowly drizzle in olive oil while blending until creamy and pale pink.
  4. Tasting — Taste and adjust lemon.
