Taramasalata
Taramasalata is eaten extensively during Lent — fish roe permitted when meat was forbidden in Orthodox tradition.
Ingredients
- 150g tarama (cured carp or cod roe)
- 200g stale white bread (crusts removed, soaked)
- juice of 2 lemons
- 1 small onion
- 200ml olive oil
- 1 clove garlic
Method
- Squeezing — Squeeze water from bread thoroughly.
- Blending — Blend tarama, bread, onion, garlic, lemon juice until smooth.
- Step 3 — Slowly drizzle in olive oil while blending until creamy and pale pink.
- Tasting — Taste and adjust lemon.
