Tiramisu
Tiramisu was invented in Treviso in the early 1970s — one of the most recent "classic" Italian dishes.
Ingredients
- 500g mascarpone
- 4 eggs separated
- 100g sugar
- 300ml strong espresso cooled
- 3 tbsp rum or Marsala
- 24 savoiardi (ladyfinger biscuits)
- cocoa powder for dusting
Method
- Beating — Beat yolks and sugar until pale and thick. Fold in mascarpone.
- Beating — Beat egg whites to stiff peaks. Fold into mascarpone mixture in two batches.
- Mixing — Mix espresso with alcohol.
- Dipping — Dip ladyfingers briefly in espresso, layer in dish.
- Spreading — Spread mascarpone cream layer. Repeat. Dust generously with cocoa.
- Refrigerating — Refrigerate minimum 6 hours.
