Tiramisu

Tiramisu was invented in Treviso in the early 1970s — one of the most recent "classic" Italian dishes.

Ingredients

  • 500g mascarpone
  • 4 eggs separated
  • 100g sugar
  • 300ml strong espresso cooled
  • 3 tbsp rum or Marsala
  • 24 savoiardi (ladyfinger biscuits)
  • cocoa powder for dusting

Method

  1. Beating — Beat yolks and sugar until pale and thick. Fold in mascarpone.
  2. Beating — Beat egg whites to stiff peaks. Fold into mascarpone mixture in two batches.
  3. Mixing — Mix espresso with alcohol.
  4. Dipping — Dip ladyfingers briefly in espresso, layer in dish.
  5. Spreading — Spread mascarpone cream layer. Repeat. Dust generously with cocoa.
  6. Refrigerating — Refrigerate minimum 6 hours.
