Fattoush
Fattoush is a bread-recycling salad born from a Levantine aversion to food waste; the sumac dressing is what distinguishes it from panzanella.
Ingredients
- 2 day-old pita breads, torn into pieces and toasted or fried until crisp
- 4 ripe tomatoes, diced
- 1 cucumber, diced
- 1 small red onion, thinly sliced
- 150 g radishes, sliced
- Large bunch parsley, chopped
- Small bunch mint, chopped
- 4 green onions, sliced
- (Dressing) 4 tbsp olive oil
- 3 tbsp lemon juice
- 2 tbsp sumac
- 1 clove garlic, minced
- 1 tsp pomegranate molasses (optional)
- Salt and pepper
Method
- Combining — Combine dressing ingredients; whisk well.
- Tossing — Toss all vegetables and herbs in a large bowl.
- Adding — Add crispy bread pieces.
- Pouring — Pour dressing over; toss gently.
- Serving — Serve immediately — the bread should be added at the last moment to retain some crunch.
