Fattoush

Fattoush is a bread-recycling salad born from a Levantine aversion to food waste; the sumac dressing is what distinguishes it from panzanella.

Ingredients

  • 2 day-old pita breads, torn into pieces and toasted or fried until crisp
  • 4 ripe tomatoes, diced
  • 1 cucumber, diced
  • 1 small red onion, thinly sliced
  • 150 g radishes, sliced
  • Large bunch parsley, chopped
  • Small bunch mint, chopped
  • 4 green onions, sliced
  • (Dressing) 4 tbsp olive oil
  • 3 tbsp lemon juice
  • 2 tbsp sumac
  • 1 clove garlic, minced
  • 1 tsp pomegranate molasses (optional)
  • Salt and pepper

Method

  1. Combining — Combine dressing ingredients; whisk well.
  2. Tossing — Toss all vegetables and herbs in a large bowl.
  3. Adding — Add crispy bread pieces.
  4. Pouring — Pour dressing over; toss gently.
  5. Serving — Serve immediately — the bread should be added at the last moment to retain some crunch.
