Sunday Roast Beef BRITISH

Ingredients

  • 1.5 kg beef rib joint
  • 2 tbsp beef dripping
  • salt
  • pepper
  • 1 onion halved
  • thyme
  • rosemary. Roast potatoes: 1 kg Maris Piper
  • goose fat. Yorkshire puddings: 4 eggs
  • 200ml milk
  • 200g flour
  • pinch salt. Gravy: pan juices
  • 2 tbsp flour
  • 500ml beef stock

Method

  1. Seasoning — Season beef; sear in dripping. Roast at 220°C (425°F) 20 min, then 180°C (350°F) 15 min/500g for medium-rare.
  2. Step 2 — Par-boil potatoes; rough surfaces; roast in goose fat 45 min until golden.
  3. Yorkshiring — Yorkshire puddings: beat eggs, milk, flour; rest 1 hour. Pour into screaming-hot oiled tin; bake 220°C (425°F) 25 min, no peeking.
  4. Resting — Rest beef 30 min; make gravy from pan juices.
