Caprese Salad
Caprese is named for the island of Capri and is said to have been created in the 1950s as a patriotic dish representing the colours of the Italian flag — red, white, and green.
Ingredients
- 4–5 large ripe tomatoes (heirloom if possible), sliced 1cm thick
- 250g (9 oz) fresh buffalo mozzarella, sliced 1cm thick
- Large bunch fresh basil
- 4 tbsp extra-virgin olive oil (best quality)
- Fleur de sel or flaked sea salt
- Freshly ground black pepper
- Optional: aged balsamic vinegar or balsamic glaze
Method
- Alternating — Alternate tomato and mozzarella slices on a serving platter, overlapping slightly.
- Step 2 — Tuck whole basil leaves between the slices.
- Drizzling — Drizzle generously with olive oil. Add balsamic if using.
- Step 4 — Finish with a pinch of fleur de sel and cracked pepper.
- Serving — Serve immediately at room temperature — never refrigerate a caprese.
