Caprese Salad

Caprese is named for the island of Capri and is said to have been created in the 1950s as a patriotic dish representing the colours of the Italian flag — red, white, and green.

Ingredients

  • 4–5 large ripe tomatoes (heirloom if possible), sliced 1cm thick
  • 250g (9 oz) fresh buffalo mozzarella, sliced 1cm thick
  • Large bunch fresh basil
  • 4 tbsp extra-virgin olive oil (best quality)
  • Fleur de sel or flaked sea salt
  • Freshly ground black pepper
  • Optional: aged balsamic vinegar or balsamic glaze

Method

  1. Alternating — Alternate tomato and mozzarella slices on a serving platter, overlapping slightly.
  2. Step 2 — Tuck whole basil leaves between the slices.
  3. Drizzling — Drizzle generously with olive oil. Add balsamic if using.
  4. Step 4 — Finish with a pinch of fleur de sel and cracked pepper.
  5. Serving — Serve immediately at room temperature — never refrigerate a caprese.
