Watermelon, Feta, and Mint Salad

This combination traces to Middle Eastern and North African cuisines where watermelon has long been paired with cheese and salt; the modern Mediterranean version became a global summer staple in the early 21st century.

Ingredients

  • 1.5 kg (1.4kg (3 lbs)) seedless watermelon, cut into 3cm triangles or cubes
  • 200g (7 oz) feta cheese, crumbled or sliced
  • Large bunch fresh mint, leaves picked
  • ½ small red onion, very thinly sliced
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lime juice
  • ½ tsp flaked sea salt
  • Freshly ground black pepper
  • Optional: 80g (3 oz) arugula

Method

  1. Spreading — Spread watermelon on a large chilled platter.
  2. Step 2 — Scatter feta, mint leaves, and red onion over watermelon.
  3. Drizzling — Drizzle with olive oil and lime juice.
  4. Step 4 — Finish with flaked salt and cracked pepper.
  5. Serving — Serve immediately — this salad does not hold.
