Watermelon, Feta, and Mint Salad
This combination traces to Middle Eastern and North African cuisines where watermelon has long been paired with cheese and salt; the modern Mediterranean version became a global summer staple in the early 21st century.
Ingredients
- 1.5 kg (1.4kg (3 lbs)) seedless watermelon, cut into 3cm triangles or cubes
- 200g (7 oz) feta cheese, crumbled or sliced
- Large bunch fresh mint, leaves picked
- ½ small red onion, very thinly sliced
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lime juice
- ½ tsp flaked sea salt
- Freshly ground black pepper
- Optional: 80g (3 oz) arugula
Method
- Spreading — Spread watermelon on a large chilled platter.
- Step 2 — Scatter feta, mint leaves, and red onion over watermelon.
- Drizzling — Drizzle with olive oil and lime juice.
- Step 4 — Finish with flaked salt and cracked pepper.
- Serving — Serve immediately — this salad does not hold.
