Amritsari Kulcha
Amritsar's famous kulcha stalls have fed pilgrims visiting the Golden Temple for centuries.
Ingredients
- 300 g all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 150 g plain yogurt
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp oil
- (Filling) 300 g boiled mashed potato
- 1 onion, finely chopped
- 2 green chilies, chopped
- 1 tsp chaat masala
- ½ tsp amchur (dry mango powder)
- Fresh cilantro
Method
- Mixing — Mix flour, baking powder, baking soda, sugar, salt. Rub in oil.
- Adding — Add yogurt gradually, knead into soft dough. Rest 2 hours covered.
- Mixing — Mix all filling ingredients.
- Dividing — Divide dough into 6 balls. Roll each, add filling, seal, and roll again carefully to ½ cm thickness.
- Cooking — Cook in tandoor or on a very hot tawa (griddle), pressing gently. Brush with butter.
