Amritsari Kulcha

Amritsar's famous kulcha stalls have fed pilgrims visiting the Golden Temple for centuries.

Ingredients

  • 300 g all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 150 g plain yogurt
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp oil
  • (Filling) 300 g boiled mashed potato
  • 1 onion, finely chopped
  • 2 green chilies, chopped
  • 1 tsp chaat masala
  • ½ tsp amchur (dry mango powder)
  • Fresh cilantro

Method

  1. Mixing — Mix flour, baking powder, baking soda, sugar, salt. Rub in oil.
  2. Adding — Add yogurt gradually, knead into soft dough. Rest 2 hours covered.
  3. Mixing — Mix all filling ingredients.
  4. Dividing — Divide dough into 6 balls. Roll each, add filling, seal, and roll again carefully to ½ cm thickness.
  5. Cooking — Cook in tandoor or on a very hot tawa (griddle), pressing gently. Brush with butter.
