Beef Bhuna
Bhuna technique produces intense concentrated flavors by cooking out all the water — a patience-rewarding method.
Ingredients
- 800 g beef, cut into chunks
- 5 tbsp oil
- 3 onions, finely chopped
- 2 tbsp garlic paste
- 1 tbsp ginger paste
- 200 g yogurt
- 2 tsp red chili powder
- 1 tsp turmeric
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- Salt to taste
Method
- Marinating — Marinate beef in yogurt and all spices (except garam masala) for 2 hours.
- Heating — Heat oil; fry onions until very deep brown, almost crispy.
- Adding — Add garlic and ginger paste; cook 3 min.
- Adding — Add marinated beef. Cook on high heat without water — bhuna means "dry frying."
- Stirring — Stir frequently, allowing meat to sear in its own juices. Cook 45–60 min.
- Step 6 — Only add splashes of water if completely sticking. Final dish should be very dry with oil separating.
- Adding — Add garam masala. Serve with rice or paratha.
