Beef Bhuna

Bhuna technique produces intense concentrated flavors by cooking out all the water — a patience-rewarding method.

Ingredients

  • 800 g beef, cut into chunks
  • 5 tbsp oil
  • 3 onions, finely chopped
  • 2 tbsp garlic paste
  • 1 tbsp ginger paste
  • 200 g yogurt
  • 2 tsp red chili powder
  • 1 tsp turmeric
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • Salt to taste

Method

  1. Marinating — Marinate beef in yogurt and all spices (except garam masala) for 2 hours.
  2. Heating — Heat oil; fry onions until very deep brown, almost crispy.
  3. Adding — Add garlic and ginger paste; cook 3 min.
  4. Adding — Add marinated beef. Cook on high heat without water — bhuna means "dry frying."
  5. Stirring — Stir frequently, allowing meat to sear in its own juices. Cook 45–60 min.
  6. Step 6 — Only add splashes of water if completely sticking. Final dish should be very dry with oil separating.
  7. Adding — Add garam masala. Serve with rice or paratha.
